Jalebi is also known as zulbia, jilapi and zalabia. It is an Indian sweet popular all over South Asia and the Middle East. It is made by deep-frying maida flour (plain flour or all-purpose flour) batter in pretzel or circular shapes, then soaked in sugar syrup. They are particularly popular in the Indian subcontinent and Iran.
This dessert can be served warm or cold. They have a somewhat chewy texture with a crystallized sugary exterior coating. Citric acid or lime juice is sometimes added to the syrup, as well as rose water. Jalebi is eaten with curd or rabri (North India) along with optional other flavours such as kewra (scented water).

Preparation time: 45-50 minutes .
Ingredients Required:
1. Refined flour/Maida (1 cup)
2. Curd ( 2 tbsp)
3. Cooking Soda (very little)
4. Oil (to fry)
5. Food colour (optional)
6. Water (1½ cup)
Method of Preparation:
For Batter mix;
1. Take a bowl and add refined flour and Curd with some food colour(optional).
2. Add Water & mix well, prepare a thick batter.
3. Keep this batter for 15 minutes and at the frying time add cooking Soda (very little) for crunchiness.
For sugar syrup;
1. Take a kadai/pan , add sugar & water as per the above measurements.
2. Add 2 drops of lemons and give it a boil.
3. Add rose water (optional).
4. Give it a good boil for 10 minutes then keep it aside .
Jalebi Making:
1. Now pour the batter into a bottle having hole at the top.
2. Place a pan on gas , heat the oil at Medium flame.
3. Keep the flame medium only all the time.
4. Now start dropping batter into circular motion/giving it spiral like shape.
5. Fry for few minutes and then dip them into sugar syrup for 2-3 minutes.
6. Take jalebis out .
7. Serve hot or cold as per your choice.
